Jau Aata

Jau ka atta is an old grain that our grandparents ate regularly, but you rarely find it ground the proper way anymore. Ours is made from pure jau (barley) that comes from the village. We clean it the traditional way and grind it fresh on a stone chakki.

You can make jau ki roti, paratha, chilla or porridge with it. The dough is a bit stiff and hard to roll, so use warm water and knead it well. If you are trying it for the first time, mix it with wheat atta in a 1:2 ratio and you will get softer rotis. It is also good for making sattu-style drinks and laddoos after roasting lightly.
