Ragi (nachni, mandua) is easy to cook with once you know one small trick: make the dough with warm water and keep it soft, or the roti will crack at the edges.
Our Ragi Atta is made from ragi grown in the village. It is cleaned the traditional way and ground fresh on a stone chakki, with nothing mixed in. Besides roti, you can use it for dosa, idli, chilla or laddoo. A bowl of ragi porridge with milk and a little gur is also a simple breakfast for kids and elders alike.
