Kangani Atta

Kangni, also known as foxtail millet or kakun, is one of the oldest grains grown in our villages, though most people today have only heard of it from their grandparents. Our Kangni Atta is made from pure kangni that comes from the village. We clean it the traditional way and grind it fresh on a stone chakki.

The atta has a mild, slightly sweet taste, so it goes well with simple home food. Use it for roti, paratha, chilla or kheer. The dough is a little crumbly, so knead it with warm water and roll the roti gently. Many people mix it with a bit of wheat atta the first time to get softer rotis.
